The Ultimate Moist Banana Bread: The Only Recipe You’ll Ever Need

Ready to turn your overripe bananas into the ultimate bakery-worthy loaf? This recipe was inspired by a TikTok video I came across a few years ago, and it’s hands-down the softest banana bread to ever leave my kitchen. The combination of a milk-infused batter and a clever oven-temperature drop halfway through gives you a moist center with a perfect golden crust. Fair warning, though: this loaf doesn't last and is usually finished in under 24 hours!

Baker’s Hack: If your bananas aren't ripe yet, poke whole yellow bananas with a knife, pop them on a foil-lined baking sheet, and roast at 180°C for 30 minutes until black and soft. Cool completely before mashing, and they’re ready for the recipe!

The Details

  • Bake time: ~50–60 minutes

  • Loaf pan size: 24cm x 13cm loaf pan

  • Oven temp: Start at 170°C, drop to 150°C

Ingredients

The Wet:

  • 3 large super-ripe bananas, well mashed

  • ½ cup butter, melted

  • 2 large eggs

  • ½ cup white sugar

  • ½ cup brown sugar (for that rich caramel depth)

  • ½ cup milk

  • 1 tsp vanilla extract

The Dry:

  • 1 ½ cups flour (plain or cake flour)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ¼ tsp cinnamon

  • ¼ tsp salt

Step-by-Step

  1. Prep the Station: Preheat your oven to 170°C. Grease your 24cm x 13cm loaf pan and line it with baking paper for effortless removal.

  2. Mix the Wet: In a large bowl, whisk together your mashed bananas, melted butter, eggs, white sugar, brown sugar, milk, and vanilla until smooth and combined.

  3. Add the Dry: Fold in the flour, baking powder, baking soda, cinnamon, and salt. Stir just until the flour disappears—don't over mix if you want a soft, tender loaf!

Slice a large banana down the middle, and place it onto the batter before popping the loaf into the oven.

4. The Temperature-Drop Bake: Pour the batter into your lined pan. Bake at 170°C for 30 minutes.

5. Finish Low & Slow: Turn the oven down to 150°C for the remainder of the bake (this prevents the top from getting too dark while the middle catches up). Check every 10–15 minutes. It’s done when a toothpick inserted into the centre comes out clean.

Take It Over the Top

This loaf is already incredible warm with a thick smear of butter, but if you want to dress it up, try one of these finishes:

  • Brown Butter Frosting: Rich, nutty, and unapologetically decadent. Spread generously over the top once the loaf has cooled completely for deep caramel warmth in every bite.

  • Biscoff Drizzle: Drizzle warm Biscoff spread over the loaf while it's still slightly warm so it soaks into the top crust for an instant spiced-cookie upgrade.

  • Sweetened Whipped Cream: Light, cool, and effortless. Spread it over the cooled loaf (or serve a generous dollop on individual slices) for a classic finish.

Baker's Notes: Dietary Swaps

  • Dairy-Free: Swap out the cow's milk for any non-dairy alternative of your choice.

  • Gluten-Free: Any gluten-free flour alternative will work here—just use the exact same amount as regular flour. I've personally made it with Cassava Flour a few times with fantastic results.
